This spicy Vietnamese stir fry is made with our creamy natural Smooth Cashew Nut Butter to give it a flavourful twist.
Ingredients:
- 3-4 tablespoons Prime Earth Smooth Cashew Nut Butter
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional, for a more authentic flavour)
- 1 tablespoon lime juice
- 2 teaspoons honey or brown sugar
- 2 garlic cloves, minced
- 1 tablespoon ginger, minced
- 1 small onion, sliced
- 1 bell pepper, sliced
- 1 medium carrot, julienned
- 1 zucchini or broccoli, chopped
- 200g (7 oz) protein of choice (tofu, chicken, shrimp, or beef)
- 2 tablespoons olive oil or Prime Earth Macadamia Nut Oil
- 1/4 cup water or vegetable broth (for thinning the sauce)
- 2 spring onions, chopped
- Fresh cilantro or Thai basil, for garnish
- Crushed peanuts or extra cashews (optional, for topping)
- Cooked rice or rice noodles (for serving)
Instructions:
1. Prepare the sauce: In a small bowl, whisk together the Prime Earth smooth cashew nut butter, soy sauce, fish sauce (if using), lime juice, honey, and water or broth to thin it out. Adjust the consistency to your liking.
2. Cook the protein: Heat 1 tablespoon of oil in a large pan or wok over medium heat. Add your chosen protein (tofu, chicken, shrimp, or beef) and cook until it’s browned and cooked through. Remove from the pan and set aside.
3. Sauté the vegetables: In the same pan, heat the remaining tablespoon of oil. Add the garlic, ginger, and sliced onion. Sauté for about 1 minute until fragrant. Then, add the bell pepper, carrot, and zucchini or broccoli. Stir fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
4. Combine everything: Add the cooked protein back into the pan with the vegetables. Pour in the smooth cashew nut butter sauce and stir everything together, making sure the sauce coats the protein and vegetables evenly. Let it cook for another 2-3 minutes, allowing the sauce to slightly thicken.
5. Serve: Garnish with chopped spring onions, red chilli's, fresh cilantro or Thai basil, and crushed peanuts or preferably cashew nuts. Serve hot over rice or rice noodles.
