Ingredients:
For the Crust:
- 1 ½ cups of crushed digestive biscuits
- ½ cup melted butter
- ¼ cup sugar
- ¼ cup

For the Cheesecake Filling:
- 24 oz (680g total) cream cheese, softened
- 1 cup Prime Earth Smooth Macadamia nut butter
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 2 tbsp cornstarch or all-purpose flour
For the Topping (Optional):
- ½ cup crushed macadamia nuts
- Drizzle of honey or caramel sauce
Instructions:

Prepare the Crust:
- Preheat your oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs, sugar, melted butter, and macadamia nut butter. Mix until the crumbs are evenly coated.
- Press the mixture into the bottom of a 9-inch springform pan, ensuring an even layer.
- Bake the crust for 10 minutes, then set aside to cool.

Make the Filling:
- In a large mixing bowl, beat the softened cream cheese and sugar until smooth.
- Add in the macadamia nut butter and vanilla extract, and continue mixing until well combined.
- Beat in the eggs one at a time, making sure each one is fully incorporated before adding the next.
- Add sour cream and cornstarch (or flour) to stabilize the filling, and mix until smooth.

Bake the Cheesecake:
- Pour the cheesecake filling over the cooled crust, smoothing the top.
- Bake for 55–65 minutes, or until the center is almost set but still slightly jiggly.
- Turn off the oven and crack the door open slightly. Let the cheesecake cool in the oven for about 1 hour to prevent cracking.

- Once the cheesecake has cooled to room temperature, transfer it to the fridge and chill for at least 4 hours or overnight for the best texture.
