Cashew & Macadamia Chocolate Chip Cookies 🍪👩‍🍳😋

By using ground cashews instead of almonds adds a more creamy, buttery richness to the cookies, enhancing their flavour and creating a softer, melt-in-your-mouth texture.

Ingredients:

  • 200g ground cashews (or ground almonds)
  • 100g maple syrup
  • ½ tsp bicarbonate of soda
  • 50g Prime Earth Smooth Macadamia nut butter
  • 50g melted coconut oil (or butter)
  • 1 tsp vanilla extract
  • Pinch of salt
  • 90g chocolate chips

Instructions:

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with baking paper.

  2. In a large mixing bowl, combine the ground cashews (or almonds), bicarbonate of soda, and salt.

  3. Add the smooth macadamia nut butter, melted coconut oil (or butter), maple syrup, and vanilla extract. Mix until everything is well combined.

  4. Gently fold in the chocolate chips.

  5. Form the dough into 15 evenly-sized balls and place them on the prepared baking sheet.

  6. Gently press each ball down slightly to flatten them.

  7. Bake for 13-15 minutes, or until the cookies are golden brown around the edges.

  8. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
